Ingredients and Substitutions

  • Avocado oil – You can use any neutral oil like canola, vegetable, or grapeseed oil.
  • Ground turkey – Ground chicken or ground pork work well too.
  • Carrots – You can use frozen diced carrots or shredded carrots for a faster option.
  • Red bell pepper – Any color bell pepper works.
  • Yellow onion – White onion or shallots can be used instead.
  • Garlic – No substitutions.
  • Ginger – No substitutions.
  • Red chili flakes – You can adjust to taste or leave out for less heat.
  • Cooked rice – Jasmine rice or basmati rice work great. Just make sure it’s cold so it fries up properly.
  • Edamame – Frozen peas or mixed vegetables are good alternatives.
  • Large eggs – No substitutions.
  • Soy sauce – Tamari or coconut aminos work for a gluten-free option.
  • Rice vinegar – Apple cider vinegar or white vinegar can be used if needed.
  • Sesame oil – No substitutions. Omit if you do not have any.
  • Salt and pepper – No substitutions.

Use a large pan so the ingredients have plenty of space to cook evenly. This helps the rice fry instead of steam.

Tips for Success

Chill the rice – Make sure your rice is fully chilled before cooking. Warm rice can turn mushy in the pan. Day old rice works best.
Prep ahead – Have all your ingredients prepped and ready before you start cooking. Fried rice comes together fast.
Season to taste – Taste and adjust seasoning at the end. Add a splash more soy sauce or a pinch of salt if needed.

How to Make Ground Turkey Fried Rice

This recipe is simple to make. First you cook the turkey and vegetables, then add the rice, seasonings, and edamame. Push everything to the side, scramble the eggs, stir it all together, and it is ready.

Ingredients

  • 3 tablespoons avocado oil divided
  • 1 pound lean ground turkey
  • 2 medium carrots diced
  • 1 red bell pepper diced
  • 1/2 large yellow onion diced
  • 3 cloves garlic minced
  • 2 teaspoons fresh ginger minced
  • 1/2 teaspoon red chili flakes
  • 2 1/2 cups cooked long grain rice chilled
  • 1 1/2 cups edamame shelled
  • 3 large eggs lightly beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • salt and pepper to taste

Instructions

  • Heat 1 tablespoon of avocado oil in a large pan over medium heat. Add the ground turkey and cook until browned, breaking it up as it cooks. Remove the cooked turkey from the pan and set aside.
  • Add another tablespoon of oil to the pan. Add the carrots, bell pepper, and onion. Cook for about 5 minutes until softened.
  • Add the garlic, ginger, and red chili flakes. Stir and cook for about 30 seconds until fragrant.
  • Add the rice and stir-fry for 2 to 3 minutes until it starts to turn golden brown. Add the edamame and stir to combine.
  • Push everything to one side of the pan. Add the remaining tablespoon of oil to the empty side. Pour in the beaten eggs and scramble until fully cooked.
  • Stir the scrambled eggs into the rice mixture. Add the cooked ground turkey back into the pan and stir to combine.
  • Stir in the soy sauce, rice vinegar, sesame oil, salt, and pepper. Cook for 1 to 2 minutes until everything is heated through and well combined. Serve hot.

Notes

  • Use day old chilled rice for the best results.
  • Frozen edamame can be used in this recipe. No need to thaw before adding.
  • Refrigerate: Store leftovers in an airtight container for up to 4 days.
  • Freeze: Freeze in a freezer-safe container for up to 3 months. Thaw in the refrigerator before reheating.
  • Reheat: Reheat in a skillet over medium heat with a splash of water or oil until warmed through. You can also reheat in the microwave in 30-second intervals, stirring in between, until hot.
