Hi, I’m Mandy and I hate doing the dishes!
When we were kids, one of our chores was to wash and dry the dishes every night after dinner. I hated it then and I still hate it now, even though I have a dishwasher. But I’ve always loved a home-cooked meal. That’s why I’m a big fan of meals that don’t leave a mountain of dishes behind.
I started A One Pot Wonder to share these kinds of recipes with anyone who wants to cook at home without dealing with a pile of cleanup. The recipes here are:

A Little About Me
I grew up in New Zealand and now live in California with my husband and our four fur babies. I’ve always loved home-cooked meals, especially the kind that bring people together without making a mess in the kitchen. My love for food started early, cooking alongside my mom, and it’s only grown over the years.
Outside the kitchen, you’ll usually find us outdoors. My husband and I completed the 52 Hike Challenge back in 2021, which meant a different hike every week for a year. And when we’re not hiking, we love to travel and try new foods, which always brings fresh inspiration back home.
My Background
I have a degree in Tourism and Marketing from the University of Waikato, and before I started blogging full time, I worked in hotel management and catering. I’ve planned huge events, worked behind the scenes at large-scale dinners, and spent years in Food and Beverage, so creating meals that work in real life—not just in theory—is something I care a lot about.
I launched my first blog Semi Homemade Kitchen in 2023, where I share easy, shortcut-friendly recipes using store-bought ingredients. A One Pot Wonder is my second blog and focuses on one-dish meals with the same approachable, everyday style.
My passion for recipe development and photography comes through in both blogs. I’ve completed photography courses through Pretty Focused, Foodtography School, and The Bite Shot. I also completed Cristina Tosi’s Creative Baking Recipe Development course to keep building my skills in the kitchen.
