Sheet Pan BBQ Chicken and Potatoes
Ingredients
- 8 chicken drumsticks patted dry
- 1½ pounds Yukon gold potatoes cut into 1½ inch pieces
- 2 tablespoons olive oil divided
- 12 ounces green beans trimmed
- ½ cup BBQ sauce
Seasoning Mix
- 1 teaspoon salt
- 1 teaspoon garlic powder
- ¾ teaspoon smoked paprika
- ½ teaspoon onion powder
- ½ teaspoon ground black pepper
Instructions
- Preheat oven to 400 degrees F.
- In a small bowl, mix the salt, garlic powder, smoked paprika, onion powder, and black pepper.
- Pat the chicken dry. Drizzle with ½ tablespoon of olive oil, then rub with half of the seasoning mix.
- Add the potatoes to a large bowl. Drizzle with 1 tablespoon of olive oil and toss with any remaining seasoning. Set the bowl aside.
- Arrange the chicken and potatoes directly on a large, rimmed sheet pan. Roast for 20 minutes.
- Add the green beans to the same bowl the potatoes were in and toss with the remaining ½ tablespoon of olive oil.
- After 20 minutes, scatter the green beans around the pan and brush the chicken with BBQ sauce.
- Return the pan to the oven and roast for an additional 15-20 minutes, until the chicken reaches an internal temperature of 165 degrees F and the potatoes are tender.
- For extra flavor, brush with more BBQ sauce and broil for 1-2 minutes until the chicken caramelizes.

- The chicken is done when it reaches 165 degrees F at the thickest part without touching the bone.
- Refrigerate: Store leftovers in an airtight container for up to 4 days.
- Freeze: Freeze chicken and potatoes in a freezer-safe container for up to 3 months. Green beans may lose texture when frozen.
- Reheat: Reheat in the oven at 350 degrees F until warmed through. You can also use a microwave, but the skin won’t stay crisp.
