Why You Need To Make This Sloppy Joe Casserole with Pillsbury Biscuits

  • Family-friendly flavors: This casserole keeps the classic sloppy joe flavor everyone already knows, but the biscuits and melted cheese make it feel a little more filling and satisfying.
  • Easy to customize: You can swap the ground beef for turkey, use a different cheese, or add a little heat with diced jalapeños to change it up based on what you like.
  • No sandwich assembly: The sloppy joe filling bakes right with the biscuits, so you can scoop and serve without making individual sandwiches.

I love a good sloppy joe, but I do not always love the mess. That is why I started making recipes like this Biscuit Sloppy Joe Casserole that can be eaten with a knife and fork, just like my Sloppy Joe Tater Tot Casserole and Sloppy Joe Pasta.

Ingredients and Substitutions

  • Avocado oil – Olive oil works well here too.
  • Yellow onion – White onion can be used instead.
  • Green bell pepper – Red or orange bell peppers are a good substitute if you want a slightly sweeter flavor.
  • Lean ground beef – Ground turkey can be used in place of the beef.
  • Garlic – Fresh garlic gives the best flavor. Garlic powder can be used if needed.
  • Tomato sauce – No substitutions.
  • Beef broth – Chicken broth can be used instead.
  • Worcestershire sauce – Soy sauce can work in a pinch, but the flavor will be slightly different.
  • Light brown sugar – Dark brown sugar works too.
  • Yellow mustard – Dijon mustard can be substituted if needed.
  • Salt and pepper – No substitutions.
  • Cheddar cheese – Colby Jack or mozzarella can be used instead.
  • Biscuits – Any standard size refrigerated biscuits will work. Avoid jumbo style biscuits since they take longer to bake.

Mandy’s Top Tip

If you do not have an oven safe skillet, simply transfer the sloppy joe mixture to a casserole dish before adding the cheese and biscuits.

Tips for Success

Simmer the sauce first – Letting the sloppy joe mixture cook for a few extra minutes helps thicken the sauce so the casserole is not too loose.
Leave space between the biscuits – The biscuits will expand as they bake, so leaving a little space between each one helps them cook more evenly.
Drain excess grease if needed – If your ground beef has more fat, drain off the extra grease before adding the sauce ingredients so the filling does not become oily.

Prep Time 10 minutes
Cook Time 45 minutes
Total Time 55 minutes
Serving Size 6 Servings

Ingredients

  • 1 tablespoon avocado oil
  • 1 medium yellow onion diced
  • 1 green bell pepper diced
  • 1 1/2 pounds lean ground beef (I used 90/10)
  • 4 cloves garlic minced
  • 1 (15 ounce) can tomato sauce
  • 1/2 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon light brown sugar
  • 2 teaspoons yellow mustard
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1 cup cheddar cheese shredded
  • 1 (8 count) can biscuits not Jumbo or Grands

Instructions

  • Preheat the oven to 375°F.
  • Heat the avocado oil in a large oven-safe skillet (I used a 12-inch cast iron) over medium-high heat.
  • Add the onion and green bell pepper. Cook for 4 to 5 minutes until softened.
  • Add the ground beef and cook until browned, breaking it apart as it cooks. Drain any excess grease.
  • Stir in the garlic and cook for 30 seconds.
  • Add the tomato sauce, beef broth, Worcestershire sauce, brown sugar, yellow mustard, salt, and black pepper. Stir well, then simmer for 10 to 15 minutes, or until the sauce thickens slightly.
  • Sprinkle the cheddar cheese evenly over the sloppy joe mixture.
  • Arrange the biscuits on top, leaving a little space between each one.
  • Bake for 18 to 22 minutes or until the biscuits are golden brown and cooked through.
  • Let the casserole sit for a few minutes before serving.

Notes

  • If you do not have an oven safe skillet, transfer the sloppy joe mixture to a casserole dish before adding the cheese and biscuits.
  • Leave a little space between the biscuits since they will expand as they bake.
  • Avoid using jumbo style biscuits as they require a longer baking time.
  • Refrigerate: Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freeze: Freeze the casserole in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
  • Reheat: Reheat individual portions in the microwave until warmed through, or reheat larger portions in the oven at 350°F until hot.
